Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup white sugar
- 1/2 cup butter
- 2 large eggs
- 1 1/4 teaspoons vanilla
- 1 1/2 cups chopped apples
- 1/3 cup packed brown sugar
- 1 tablespoon all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon butter
Instructions
1
Preheat the oven to 375 degrees Fahrenheit, or 190 degrees Celsius, for optimal baking results.
2
Next, prepare the muffin tin by either greasing it or lining it with paper liners to prevent sticking.
3
Meanwhile, combine the flour, baking powder, baking soda, and salt in a medium-sized bowl to create a dry mixture.
4
In a separate large bowl, use an electric mixer to cream together the sugar, butter, and eggs until they form a smooth consistency.
5
Mix in the vanilla extract to add flavor. Then, gently fold in the apples and finally blend in the dry mixture until well combined.
6
Spoon the batter into the prepared muffin cups, filling each one about 2/3 full.
7
Create a topping by combining the brown sugar, flour, and cinnamon in a small bowl. Use your fingers or a pastry blender to cut in the butter until the mixture resembles coarse crumbs.
8
Sprinkle the topping evenly over each muffin top.
9
Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
10
Allow the muffins to rest for 5 minutes before transferring them to a wire rack to cool and enjoy.
