  • 3/4 cup lightly packed brown sugar
  • 1 tablespoon baking powder

  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 large apples - peeled, cored, and chopped
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons cold butter, cut into pieces

Preheat the oven to its highest temperature setting, indicated by 375 degrees F or 190 degrees C. Next, prepare a muffin tin with 12 cups by lining it with paper inserts.

Make the base mixture: Combine dry ingredients such as flour, bran, brown sugar, baking powder, baking soda, cinnamon, and salt in a large bowl. Ensure they are well incorporated.

Make the wet mixture: In another bowl, whisk together milk, vegetable oil, and eggs until smooth. Then, pour the wet mixture into the dry mixture bowl and blend just until combined.

Add apples to the mixture: Gently fold in chopped apples into the wet and dry mixture until they are evenly distributed.

Prepare the streusel topping: In a separate bowl, mix together flour, brown sugar, and cinnamon. Use your fingers or a pastry blender to break the butter into small pieces until you achieve a crumbly texture.
