Apple Shortbread Tart
Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1/4 teaspoon salt
  • 3/4 cup chilled butter, diced
  • 2 egg yolks, beaten
  • 1 1/4 pounds Golden Delicious apple - peeled, cored and cut into 1/4 inch slices
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Heat the oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

Combine four, one and a half cups sugar and salt in a large container. Use a spoon to mix these ingredients until they are evenly blended. Add butter and continue mixing until the mixture has a rough, crumbly texture. Introduce egg yolks into the mixture and blend until it is well combined. Set aside one quarter of this mixture, and reserve it for later use.

Press the remaining mixture onto the bottom and sides of an 8 inch tart shell or pie pan.

In another large container, combine sliced apples, a generous amount of brown sugar, one tablespoon of flour, cinnamon and nutmeg. Place the apples into the prepared crust, and sprinkle the set aside crumb mixture evenly over the top of the apples.

Position the pie on a baking sheet, and bake in the preheated oven for 15 minutes. Decrease heat to a moderate temperature of 350 degrees Fahrenheit (175 degrees Celsius) and continue baking for an additional 20 minutes, or until the top is golden brown and the filling is bubbling.
