- 4 cups rolled oats, or as needed
- 1 medium apple, cored and grated
- 1 egg
- 1 cup canned pumpkin
- 1/4 cup rolled oats

Preheat your oven to 400 degrees Fahrenheit, or 200 degrees Celsius. To prevent sticking, line a baking sheet with parchment paper.

Next, take 4 cups of rolled oats and process them in a food processor until they reach a fine consistency. Transfer the ground oats to a mixing bowl.

Add some grated apple to the bowl and mix it in thoroughly. Then, combine canned pumpkin and an egg until they are fully incorporated into the mixture, resulting in a thick and slightly sticky texture.

Now, roll out the dough on a surface that has been sprinkled with the remaining 1/4 cup of oats to a thickness of about half an inch. Use a cookie cutter to cut out shapes, and then place them on the prepared baking sheet.

Bake the cookies in your preheated oven for 12 to 15 minutes, or until they are crispy and golden brown. Once done, remove them from the oven and let them cool completely on a wire rack.
