Apple Matzo Kugel
Ingredients
  • 4 matzo crackers, crushed
  • 3 eggs, beaten
  • 1/3 cup applesauce
  • 1/4 cup white sugar
  • 1 teaspoon salt, divided
  • 1/2 teaspoon lemon juice
  • 3 Granny Smith apples - cored, peeled and chopped
  • 1/2 cup dried cranberries
  • 1 teaspoon ground cinnamon
Instructions
1
Preheat your oven to a medium-high temperature of 350 degrees Fahrenheit, or equivalently 175 degrees Celsius.
2
Next, place a generous amount of crushed matzo crackers in a standard-sized bowl and add sufficient water to cover the crackers completely. Allow them to sit for 2 minutes, then carefully pour off any excess water that accumulates on the surface.
3
Don't press or squeeze the crackers, as this can cause them to become compacted and lose their texture.
4
In a separate bowl, whisk together the eggs, applesauce, 1/4 cup of granulated sugar, a pinch of salt, and a squeeze of fresh lemon juice until well combined.
5
Mix in the chopped apples and dried cranberries until they are fully incorporated into the mixture.
6
Spread the apple mixture evenly across a 2-quart casserole dish to create a uniform layer.
7
In another small bowl, combine the remaining 1/4 cup of sugar and a pinch of cinnamon.
8
Mix these dry ingredients together until they are well blended, then sprinkle the resulting mixture evenly over the top of the apple layer.
9
Bake the casserole in your preheated oven for approximately 45 minutes, or until the top is golden brown and the apples are tender.
