Cinnamon Apple Frangipane Cake
Ingredients
  • 1/2 cup unsalted butter, softened
  • 6 tablespoons unsalted butter, softened
  • 1 (7 ounce) package almond paste
  • 1 cup white sugar
  • 1 teaspoon vanilla bean paste
  • 5 large eggs
  • 1 cup sifted cake flour
  • 1/2 teaspoon kosher salt
  • 2 medium Apples, raw
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon white sugar
  • 1/4 cup powdered sugar, or to taste
  • 2 tablespoons toasted sliced almonds, or to taste
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius).
2
Next, take a 9-inch round springform pan and grease it thoroughly with butter or cooking spray.
3
In a large mixing bowl, combine 1/2 cup plus 6 tablespoons of softened butter and an equal amount of almond paste.
4
Add a full cup of sugar to the mixture and blend at low speed using your stand mixer with the paddle attachment until everything comes together.
5
Increase the speed of your mixer to medium-high and continue blending until your mixture is smooth, light, and airy - about 3 to 4 minutes.
6
Add a teaspoon of vanilla bean paste to the mixture and blend until well combined.
7
Then, add your eggs one at a time, blending thoroughly after each addition until everything is fully incorporated.
8
Using a rubber spatula, gently fold in 1 cup of flour and a pinch of salt until just combined.
9
Pour the mixture into your prepared springform pan.
10
Top the batter with sliced apples - arrange them in a way that looks appealing to you!
11
Brush the apples with melted butter and sprinkle with 1 tablespoon of sugar.
12
Bake your cake in the preheated oven for 50 to 55 minutes, or until it's golden brown and a wooden pick inserted into the center comes out clean.
13
Remove your cake from the oven and let it cool on a wire rack for 10 minutes.
14
Remove the sides of your springform pan and let it cool completely - this should take about 1 hour.
15
Dust the top of your cake with powdered sugar and sprinkle with toasted sliced almonds for a beautiful finish.
