Ingredients
- 1 (21 ounce) can apple pie filling
- 6 (8 inch) flour tortillas
- 1 teaspoon ground cinnamon
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup water

Preheat the oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

To prepare the baking dish, apply a thin layer of grease to it. This will ensure that your enchiladas release easily once they're cooked.

Next, take a generous amount of pie filling - roughly one quarter cup more than the dish can hold - and place it in the center of each tortilla. Sprinkle a pinch of cinnamon over the filling, then roll up the tortillas and tuck in their edges to seal them tightly. Place these rolled tortillas seam-side down in the prepared baking dish.

In a medium-sized saucepan, heat butter over medium heat. Combine it with white sugar, brown sugar and water in the saucepan. Bring this mixture to a rolling boil, stirring constantly to prevent lumps from forming. Once it reaches a boil, reduce the heat and let it simmer for 3 minutes.

Pour this sugar mixture over the enchiladas, allowing them to sit and absorb the flavors for 30 minutes.

Finally, place the enchiladas in the preheated oven and bake for 20 minutes, or until they're golden brown.
