Ingredients
- 3 tablespoons butter
- 2 small onion, chopped
- 2 apples - peeled, cored and finely chopped
- 1 tablespoon curry powder
- 3 tablespoons all-purpose flour
- 1 cup hot chicken broth
- 1 cup milk
- 8 skinless, boneless chicken breasts
- salt and pepper to taste
Instructions
1
Preheat your oven to a high heat setting of 350 degrees Fahrenheit (or the equivalent temperature in degrees Celsius, which is 175 degrees C).
2
Melt a generous amount of butter in a large cooking vessel. Add sliced onions and diced apples; cook over medium heat until they become soft and tender. Introduce a blend of spices, commonly known as curry powder; cook for just one minute to allow the flavors to meld. Next, add a spoonful of flour; cook for another minute to prevent lumps from forming.
3
In a separate bowl, whisk together stock and milk until well combined. Set this mixture aside for the time being.
4
Simultaneously, sprinkle a pinch of salt and a few grinds of black pepper over chicken breasts. Arrange these in a single layer within a 9x13-inch (or larger) baking dish, depending on the size of your chicken breasts. Pour the curry sauce over the top of the chicken.
5
Place the baking dish in the preheated oven and bake until the chicken is cooked through, typically requiring 45 to 50 minutes of cooking time.
