Cinnamon Apple Crisp Cups
Ingredients
  • 3 large McIntosh apples - peeled, cored, and chopped
  • 1/4 cup water
  • 2 tablespoons white sugar
  • 1/2 teaspoon ground cinnamon, or to taste
  • 2 cups all-purpose flour
  • 2 cups rolled oats
  • 1 1/2 cups brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 cups butter
Instructions
1
Preheat your oven to the desired temperature of 350 degrees F (175 degrees C).
2
Next, take a moment to prepare your mini-muffin tins by spraying them with cooking spray or butter to ensure they don't stick during the baking process.
3
Meanwhile, combine diced apples with water and granulated sugar in a saucepan over medium-low heat. Add a pinch of cinnamon to the mixture and stir occasionally until the apples are partially cooked, approximately 5 minutes. Remove from heat.
4
In a separate large bowl, whisk together flour, rolled oats, brown sugar, and another sprinkle of cinnamon. Use a pastry cutter or your fingers to work the butter into the dry ingredients until you achieve a mixture resembling coarse crumbs.
5
Now, scoop a generous amount of the crust mixture into each mini muffin cup, pressing it down firmly to cover the bottom and rise up the sides of the cup. Make sure the crust reaches the top of the muffin cup and fill in any gaps with additional crust mixture. You'll be left with some leftover crust.
6
Fill each muffin cup with about 2 teaspoons of the apple filling, followed by a sprinkle of the remaining crust mixture on top.
7
Finally, place your mini muffin tins in the preheated oven and bake until golden brown, typically taking 15 to 20 minutes.
