Ingredients
- 2 tablespoons butter
- 1/8 yellow onion, minced
- 1 Granny Smith apple - peeled, cored and diced
- 2 stalks celery ribs, finely chopped
- 1/4 cup dried cranberries
- 1 teaspoon kosher salt
- 5 (1 inch thick) boneless pork chops
- 1 cup apple juice
- 1 tablespoon cornstarch
- 2 tablespoons brown sugar
- 1 teaspoon freshly ground black pepper
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius), ensuring it reaches the desired temperature for cooking.
2
In a Dutch oven, melt 1 tablespoon of unsalted butter over medium heat on the stovetop. Add a diced onion and cook until it becomes extremely tender and starts to develop a rich brown color. Remove the Dutch oven from the heat source.
3
Throughout this step, combine diced apple, celery, and dried cranberries in a bowl. Add a pinch of salt to enhance the flavors.
4
Place each pork chop flat on a cutting board. Using a sharp knife held parallel to the cutting board, carefully cut a small pocket in each chop without damaging its surrounding edges. Fill this pocket with the apple-cranberry mixture.
5
Melt the remaining 1 tablespoon of unsalted butter in the Dutch oven over medium heat on the stovetop. Pan-fry the pork chops in butter for 2 minutes on each side, ensuring they develop a golden-brown crust.
6
Cover the Dutch oven and place it in the preheated oven. Allow the pork chops to bake for 45 minutes, resulting in tender and flavorful meat.
7
Transfer the cooked pork chops from the Dutch oven to a plate, covering them with aluminum foil. Return the Dutch oven to the stovetop over medium heat.
8
In a small bowl or measuring cup, mix together apple juice, cornstarch, and brown sugar. Pour this mixture into the Dutch oven.
9
Cook the liquid over medium heat in the Dutch oven, stirring frequently until it reduces by half. Season to taste with black pepper.
10
Serve the apple glaze over pork chops, providing a sweet and tangy accompaniment to your dish.
