Ingredients
- cooking spray
- 1 1/4 cups white sugar
- 2/3 cup oil
- 3 eggs
- 1 tablespoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 1/2 tablespoons ground cinnamon, or more to taste
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 2 cups shredded zucchini
- 1 cup shredded apple
Instructions
1
First, preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.
2
Next, prepare your muffin cups by either spraying them with cooking spray or lining them with paper liners. This will ensure easy removal of the muffins once they're baked.
3
Then, combine sugar, oil, eggs, and vanilla extract in a bowl and whisk them together until you achieve a smooth consistency.
4
After that, incorporate flour, cinnamon, baking soda, and baking powder into the sugar mixture using a gentle stirring motion. Make sure to stop mixing once the ingredients are just combined; you don't want to overmix.
5
Now, fold in the zucchini and apple into the sugar mixture. This will distribute the ingredients evenly throughout the batter.
6
Finally, fill each muffin cup with the prepared batter, leaving about 2/3 of the cup empty. This will allow for even baking and prevent overflowing during the cooking process.
7
Place the muffin cups in the preheated oven and bake until they spring back after being pressed gently on top, taking approximately 25 minutes to complete.
