  • 2 cups apple cider
  • 1 cup kosher salt
  • 1 tablespoon fresh sage
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 1 tablespoon black peppercorns
  • 4 cups ice cubes

Combine 4 cups of water with apple cider, kosher salt, sage, rosemary, thyme, and peppercorns in a large stockpot. Heat the mixture over high heat until it reaches its boiling point, stirring constantly to ensure the salt is fully incorporated. Once boiling, reduce heat and continue cooking until the salt has completely dissolved. Remove the stockpot from the heat source; then, quickly add ice cubes to stop the cooking process and chill the brine.
