Apple Carrot Muffins
Ingredients
  • 6 tablespoons water
  • 2 tablespoons ground flax seeds
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking soda
  • 1 1/2 cups grated carrots
  • 1 1/2 cups finely chopped apples
  • 1 teaspoon kosher salt
  • 3/4 cup unsweetened applesauce
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup olive oil
  • 2 large eggs
  • 1/2 cup chopped walnuts
Instructions
1
Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit. Alternatively, you can set it to 175 degrees Celsius.
2
Next, prepare the muffin cups by spraying them with cooking spray or lining them with paper liners to prevent sticking.
3
Mix the water and ground flax seeds in a bowl until well combined. The mixture should have a smooth, gel-like consistency.
4
In a separate large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, and salt until they are evenly blended. Add the grated carrots and chopped apples to the bowl; toss them gently to coat them evenly.
5
Mix in the applesauce, white sugar, brown sugar, olive oil, eggs, chopped walnuts, and flax seed mixture into the flour mixture until everything is well incorporated.
6
Make sure the batter is smooth and free of lumps by giving it a final stir.
7
Spoon the batter into the prepared muffin cups, filling each one about 3/4 of the way full.
8
Bake the muffins in the preheated oven for 18 minutes, or until they are golden brown and the tops spring back when you press them lightly.
