Apple Cake for Passover
Ingredients
  • 1 cup vegetable oil
  • 1 cup white sugar
  • 2 large eggs
  • 1 1/2 cups matzo meal
  • 1/2 cup potato starch
  • 2 teaspoons ground cinnamon, divided
  • 8 large apples - peeled, cored and sliced
  • 1/2 cup brown sugar, or more as needed
  • 1/2 teaspoon ground nutmeg
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit, or equivalently 175 degrees Celsius.
2
Next, take a 9x13-inch glass baking dish and lightly coat it with non-stick cooking spray to prevent sticking.
3
In a large mixing bowl, combine oil, sugar, and eggs, then use an electric mixer to blend the ingredients until they are thoroughly mixed. Add matzo meal, potato starch, and 1 teaspoon of ground cinnamon to the mixture and continue blending until all the ingredients are fully incorporated.
4
Set the batter aside for further use.
5
To prepare the apple mixture, place your desired apples in a separate large bowl and sprinkle them with 1/2 cup of brown sugar, the remaining 1 teaspoon of ground cinnamon, and a pinch of nutmeg.
6
Pour half of the prepared batter into your 9x13-inch glass baking dish, followed by the apple mixture on top.
7
Add the remaining batter to the dish and gently press it over the apples, ensuring an even distribution.
8
Finally, sprinkle a small amount of brown sugar on top of the batter for added flavor.
9
Place the baking dish in your preheated oven and bake for 45 minutes, or until the desired result is achieved.
