Preheat your oven to the desired temperature of 350 degrees Fahrenheit, or equivalently 175 degrees Celsius.

Next, take a 9x13-inch glass baking dish and lightly coat it with non-stick cooking spray to prevent sticking.

In a large mixing bowl, combine oil, sugar, and eggs, then use an electric mixer to blend the ingredients until they are thoroughly mixed. Add matzo meal, potato starch, and 1 teaspoon of ground cinnamon to the mixture and continue blending until all the ingredients are fully incorporated.

To prepare the apple mixture, place your desired apples in a separate large bowl and sprinkle them with 1/2 cup of brown sugar, the remaining 1 teaspoon of ground cinnamon, and a pinch of nutmeg.
