Apple and Brown Sugar-Infused Corned Beef
Ingredients
  • 4 cups apple juice
  • 1/2 cup brown sugar
  • 1 tablespoon prepared mustard
  • 2 (3 pound) corned beef briskets with spice packets
  • 20 small red potatoes, scrubbed
  • 1 head cabbage, cored and cut into large chunks
  • 2 onions, cut into 8 wedges
  • 4 carrots, cut into chunks

Place a generous amount of apple juice into a substantial slow cooker. Combine the brown sugar and mustard, stirring vigorously until the brown sugar has fully incorporated into the mixture. Add the contents of the spice packets, then carefully place the briskets into the apple juice mixture. Cover with a layer of potatoes, cabbage chunks, onions, and carrots, gently pressing the vegetables into the liquid.

Seal the slow cooker and cook on High for 4 to 5 hours, or on Low for 8 to 10 hours, until the corned beef is extremely tender. Slice the meat into thin strips across the grain and serve alongside the vegetables.
