Anise Orange Crepes

  • 1 cup milk
  • 3/4 cup orange juice
  • 1 tablespoon anise extract
  • 1 cup all-purpose flour
  • 2 tablespoons butter, divided
  • Sugar, for dusting

Combine eggs, milk, orange juice, and anise in a bowl and whisk until well blended. Add flour to the mixture and continue blending until it forms a smooth consistency. Allow the mixture to chill in the refrigerator overnight.

To prepare the crepes, melt a small amount of butter in a heavy frying pan over medium heat; spread the melted butter evenly across the surface of the pan. Pour in 1/4 cup of the batter, gently tilt the pan to distribute the mixture uniformly. Cook until the batter starts to thicken and bubble, when it develops a light brown color, flip over, and continue cooking until the other side is also lightly browned, taking approximately 4 minutes in total. Repeat with the remaining batter. To present, sprinkle the crepes with sugar.
