Ingredients
- 12 eggs
- 2 cups white sugar
- 2 cups vegetable oil
- 1/2 teaspoon anise oil
- 1 (1.5 fluid ounce) jigger whiskey
- 4 cups all-purpose flour
Instructions
1
Combine eggs, sugar, vegetable oil, anise oil, and whiskey in a large bowl. Use an electric mixer to thoroughly mix the ingredients until they are completely combined. Then, gradually add flour to the mixture and continue blending until it is fully incorporated. Cover the bowl with plastic wrap, refrigerate for an extended period of time, and allow the mixture to chill overnight.

Next, preheat a pizzelle iron according to its manufacturer's instructions. Lightly spray the iron with cooking spray to prevent sticking. Using a spoon, drop small amounts of the chilled batter onto the center of each pattern on the iron. Close the lid and cook the cookies until no more steam is emitted from the iron, approximately 1 1/2 minutes. Check the cookies periodically to ensure they are not overcooked and adjust cooking time as necessary. Once cooked, carefully remove the cookies from the iron, let them cool, and store them in an airtight container at room temperature.
