Angel Hair with Tuna and Olive Sauce
Ingredients
  • 2 1/2 tablespoons olive oil
  • 3/4 cup chopped onion
  • 2 cloves garlic, chopped
  • 1 (5 ounce) can solid white tuna packed in water, drained
  • 1 (14.5 ounce) can whole peeled tomatoes, chopped
  • 1 (4.25 ounce) can black olives, drained and halved
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • freshly ground black pepper to taste
  • 1 (28 ounce) can tomato puree
  • 1 (16 ounce) package uncooked angel hair pasta
  • 1/2 cup grated Parmesan cheese for topping
Instructions
1
Preheat your stovetop to a medium heat setting, and warm the olive oil in a skillet. Introduce the sliced onion and minced garlic into the skillet, allowing them to soften until they're tender. Combine the tuna with the cooked onion and garlic mixture, then add in the peeled tomatoes. Continue to cook until the tuna is heated through.
2
Add the pitted olives to the skillet, and season with dried basil, oregano, and a pinch of pepper. Stir everything together, then cook for an additional 5 minutes, stirring constantly.
3
Next, add the tomato puree to the skillet and stir to combine. Cover the skillet with a lid, reduce the heat to low, and let it simmer for 30 minutes, stirring occasionally throughout.
4
Meanwhile, prepare a large pot of salted water by bringing it to a rolling boil. Submerge the angel hair pasta into the boiling water, and cook for 4 minutes or until it reaches the al dente stage. Serve the cooked pasta topped with the sauce, and finish it off with a sprinkle of Parmesan cheese.
