Traditional Amish Macaroni Salad
Ingredients
  • 2 cups uncooked elbow macaroni
  • 3 large hard-cooked eggs, chopped
  • 1 small onion, chopped
  • 3 stalks celery, chopped
  • 1 small red bell pepper, seeded and chopped
  • 2 tablespoons dill pickle relish
  • 2 cups creamy salad dressing (e.g. Miracle Whip)
  • 3/4 cup white sugar
  • 3 tablespoons prepared yellow mustard
  • 2 1/4 teaspoons white vinegar
  • 3/4 teaspoon celery seed
  • 1/4 teaspoon salt
Instructions
1
Boil a substantial container of salted water until it reaches its maximum temperature. Prepare elbow macaroni by submerging it in the boiling water, stirring periodically to prevent lumps, until it reaches a slightly tender yet still resilient texture, approximately 8 minutes. Remove from the water and allow it to relax before cooling down.

Mix eggs, onion, celery, bell pepper, and relish in a spacious mixing vessel. Combine all the ingredients for the salad dressing - sugar, mustard, vinegar, celery seed, and salt - in a smaller container. Pour the dressing over the egg mixture and vegetables, ensuring everything is well incorporated. Add the cooled macaroni on top and stir until it's fully combined with the rest of the ingredients. Cover the container and refrigerate for at least 1 hour before serving.
