  • 1 sweet onion, chopped
  • 6 eggs, lightly beaten
  • 4 cups frozen Southern-style hash brown potatoes, thawed
  • 2 cups shredded Cheddar cheese
  • 1 1/2 cups small curd cottage cheese
  • 1 1/4 cups shredded Swiss cheese
  • 1 cup chopped green bell pepper, or to taste
  • 1 (4 ounce) can chopped green chilies, or to taste

Preheat your oven to a high temperature, specifically 350 degrees Fahrenheit or 175 degrees Celsius.

In a large skillet, cook the bacon and onion over moderate heat, stirring occasionally, until the bacon becomes golden brown and crispy, taking around 10 to 15 minutes. Carefully pour off the excess fat, reserving it for later use.

Using the reserved bacon grease, lightly coat a 9x13-inch baking dish to prevent food from sticking.

Mix together the cooked bacon and onion, eggs, diced hash brown potatoes, shredded Cheddar cheese, crumbled cottage cheese, sliced Swiss cheese, chopped bell pepper, and diced green chiles in the prepared baking dish; make sure everything is well combined.
