Alsatian Tarte Flambee
Ingredients
  • 3 cups all-purpose flour
  • 3 tablespoons all-purpose flour
  • 1 (.25 ounce) package active dry yeast
  • 1 cup lukewarm water
  • 1 pinch white sugar
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 ounces bacon strips, diced
  • 3 onions, cut in half and thinly sliced
  • 3/4 cup heavy cream
  • 2 tablespoons heavy cream
  • 3/4 cup sour cream
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon finely chopped parsley
Instructions
1
Start by placing three cups plus three tablespoons of flour into a large bowl and create a central depression.
2
Add yeast, three to four tablespoons of lukewarm water, and sugar into the central depression and gently incorporate some flour from the sides.
3
Allow the mixture to rest until it becomes frothy, approximately ten minutes.
4
Next, add the remaining water and olive oil to the bowl.
5
Mix everything together using a wooden spoon until it is well combined.
6
Add one teaspoon of salt and work the dough with your hands until it forms a cohesive ball.
7
Loosely cover the dough with a clean dish towel and let it rise in a warm, dry environment until it has doubled in volume, around thirty minutes.
8
While the dough is rising, prepare the topping.
9
Combine three-quarters of a cup plus two tablespoons of heavy cream and sour cream in a bowl until smooth.
10
Season the mixture with salt, pepper, and parsley.
11
Preheat your oven to 425 degrees F (220 degrees C).
12
Divide the dough into four equal portions.
13
Roll out two of the pieces as thinly as possible into long rectangles on a large piece of parchment, so both can fit on one baking sheet.
14
Fold the sides of the dough pieces to form a 1/4-inch edge all around.
15
Spread the cream topping evenly across the dough and top each piece with one-quarter of the bacon and onion rings.
16
Transfer the two flammkuchen onto a baking sheet using parchment paper.
17
Bake in the preheated oven until golden brown and crisp, approximately twenty minutes.
18
Repeat with the other two dough pieces.
