Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups packed brown sugar
- 2/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 1/2 cups rhubarb, chopped
- 1/2 cup sliced almonds
- 1/3 cup white sugar
- 1 tablespoon butter, melted
- 1/4 cup sliced almonds

Preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.

Next, take a moment to prepare your baking vessels by lightly coating the inside of two 9-inch round cake pans with a thin layer of cooking oil or non-stick spray.

In a separate bowl, whisk together the dry ingredients of flour, salt, and baking soda until well combined.

In a large mixing bowl, use an electric mixer to cream together the brown sugar, oil, egg, and vanilla extract until you achieve a smooth consistency.

Gradually add the dry ingredients to the wet mixture, alternating with milk until you reach a state of complete incorporation.

Fold in the rhubarb and 1/2 cup of sliced almonds until they are fully incorporated into the batter.

Pour the prepared batter into the two cake pans that have been waiting patiently in the oven.

Make a simple sugar and butter mixture by whisking together white sugar and melted butter in a small bowl. Add 1/4 cup of sliced almonds to this mixture and stir until well combined.

Sprinkle the sugar and butter mixture evenly over the top of the batter in each cake pan.
