Almond-Infused ANZAC Biscuits
Ingredients
  • 2 cups quick cooking oats
  • 1 3/4 cups all-purpose flour
  • 1/2 cup sliced almonds
  • 1 cup white sugar
  • 1 cup melted butter
  • 1 teaspoon baking soda
  • 2 tablespoons golden syrup
  • 2 tablespoons boiling water
Instructions
1
Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit. Next, apply a thin layer of non-stick cooking spray to the baking surfaces to prevent sticking.
2
In a moderately-sized container, combine the rolled oats, flour, almonds, and granulated sugar in a uniform mixture.
3
In a small cooking vessel placed over medium heat, melt the butter until it reaches its liquid state. Once melted, take the vessel off the heat source and blend in the baking soda, golden syrup, and boiling water. Combine the warm mixture with the dry ingredients and mix until a cohesive whole is formed.
4
Form the dough into small, walnut-sized clusters. Place these clusters 2 inches apart on the prepared baking surfaces and flatten them slightly to achieve an even shape.
5
Bake the cookies in the preheated oven for 15-18 minutes, or until they have reached a golden brown color. Remove the cookies from the baking surfaces and allow them to cool on wire racks for further enjoyment.
