  • 3 medium ripe bananas, mashed
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 3 cups almond flour
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Preheat your oven to 300 degrees Fahrenheit (150 degrees Celsius). Lightly grease a 9x5-inch loaf pan with cooking spray.

Combine eggs and vinegar in a bowl, whisking them together until smooth. Add bananas, coconut oil, honey, and vanilla to the mixture and blend thoroughly.
