Almond-Filled Puff Pastry Claws
Ingredients
  • 1/3 cup superfine sugar
  • 1/4 cup unsalted butter, softened
  • 2 large egg yolks
  • 1/4 teaspoon almond extract
  • 1 cup ground almonds
  • 1 tablespoon all-purpose flour
  • 1 sheet puff pastry, thawed and rolled out into a 16x16-inch square
  • 1 egg
  • 1 tablespoon water
  • 2 tablespoons sliced almonds, or to taste
  • 2 tablespoons superfine sugar, or to taste

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

Take 1/3 cup of granulated sugar and butter, then combine them in a bowl using an electric mixer until they become smooth and airy, approximately 5 minutes. Introduce egg yolks into the mixture and blend well; incorporate almond extract to enhance flavor. Mix ground almonds and flour with butter until a smooth, thick paste forms.

Cut the puff pastry into 8 identical portions. Place a spoonful of almond mixture in the center of each piece, then fold the top over the filling and press the edges together to seal. Make three equal cuts along the bottom edge of each pastry, leaving space between them for the "claws". Arrange pastries on a baking sheet.

In a separate bowl, whisk together an egg and water until well combined. Brush each pastry with the egg mixture and sprinkle with remaining sugar and sliced almonds.

Bake the pastries in the preheated oven until they rise and turn golden brown, taking around 15 to 20 minutes.
