Ingredients
- 1 (18.25 ounce) package yellow cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 eggs
- 1 (3 ounce) package strawberry-flavored Jell-O® mix
- 1/2 cup boiling water
- 1 (3.5 ounce) package instant vanilla pudding mix
- 1 1/2 cups milk
- 1/2 cup fresh blueberries
- 2 cups frozen whipped topping, thawed
- 1/2 cup fresh blueberries
- 1 1/2 cups sliced fresh strawberries
- 1/2 cup miniature marshmallows
Instructions
1
Begin by heating your oven to 350 degrees F (175 degrees C).
2
Next, take a moment to prepare your baking pan by coating it with butter or cooking spray and dusting it lightly with flour, ensuring a smooth release when the cake is done.
3
In a large mixing bowl, combine the yellow cake mix, 1 cup of water, vegetable oil, and eggs. Using a hand mixer or stand mixer on medium speed, blend the ingredients together until they form a smooth batter. Mix for 2 minutes to achieve the perfect consistency.
4
Pour the cake batter into your prepared baking pan and place it in the preheated oven. Bake for 35 minutes, or until the cake is lightly browned and a toothpick inserted into the center comes out clean.
5
Allow the cake to cool completely on a wire rack, which should take around 30-40 minutes.
6
Once the cake has cooled, use a fork to poke holes all over its surface, about 1 inch apart. This will help the gelatin mixture seep into the cake evenly.
7
Dissolve strawberry gelatin in boiling water, then slowly pour it over the cake. Let the gelatin seep into the holes for about an hour, allowing it to set.
8
Transfer the cake to a serving platter and cut it in half horizontally.
9
Mix instant vanilla pudding mix with milk in a bowl, whisking until the mixture thickens and becomes smooth. Add 1/2 cup of blueberries to the bowl and stir until they are evenly distributed.
10
Spread a layer of blueberry filling onto the bottom half of the cake. Place the top half over the filling, creating a sandwich-like effect.
11
Spread whipped topping smoothly over the top and sides of the cake. Arrange 1/2 cup of blueberries in a square shape in the upper left corner of the cake, creating a star-like design.
12
Finally, arrange alternating layers of strawberries and miniature marshmallows into horizontal red and white stripes on top of the cake, creating a visually appealing dessert.
