A classic apple pie with sweet cinnamon-spiced apples in a flaky crust. This homemade fruit pie is a timeless dessert that completes any July 4th feast.

Ingredients
- 2 (9-inch) pie pastry crusts (one for bottom, one for top; homemade or store-bought)
- 6 cups (840 g) peeled and sliced tart apples (such as Granny Smith or a mix of tart and sweet apples)
- 1/2 cup (100 g) granulated sugar
- 1/4 cup (50 g) packed brown sugar
- 2 tablespoons (16 g) all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- Pinch of salt
- 1 tablespoon (12 g) unsalted butter, cut into small pieces
- 1 egg (for egg wash)
- 1 tablespoon (15 ml) milk (for egg wash)

Preheat the oven to 350°F (175°C). Place one pie crust in a 9-inch pie pan and set aside.

In a large bowl, toss the apple slices with both sugars, flour, cinnamon, nutmeg (if using), and a pinch of salt until the apples are evenly coated. Let the mixture sit for a minute or two to develop juices.

Pour the apple mixture into the prepared pie crust. Dot the top of the apples with the pieces of butter.

Cover with the second pie crust. Trim any excess dough and pinch the edges to seal. Cut a few small slits or shapes in the top crust to allow steam to escape.

In a small bowl, beat the egg with the milk. Brush this egg wash over the top crust for a golden finish.

Place the pie on the middle rack of the oven. Bake for about 40–45 minutes, or until the crust is golden brown and the filling is bubbling through the vents. If the edges brown too quickly, cover them loosely with foil.

Let the pie cool on a wire rack for at least 15 minutes before slicing. Serve warm or at room temperature, perhaps with a scoop of vanilla ice cream.
