  • 2 pounds pepperjack cheese
  • 2 cups half-and-half cream
  • 1 large tomato, diced
  • 1 onion, diced
  • 1/2 cup diced red bell pepper
  • 3 cups spinach, rinsed and chopped

Using a heat-proof bowl set over a pot of simmering water, gently warm the pepperjack cheese. As it begins to dissolve, incorporate half and half until a velvety texture is achieved. Blend in the diced tomato, sautéed onion, roasted red bell pepper, and chopped spinach. Pour into a serving dish and present warm with tortilla chips or crusty bread.
