Alaskan Halibut Chowder

  • 1 large onion, finely diced
  • 2 large potatoes, peeled and cubed
  • 2 cloves garlic, minced
  • 6 cups chicken stock
  • 1 (8 ounce) can stewed tomatoes, diced
  • 2 large carrots, shredded
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • salt and pepper to taste
  • 2 pounds halibut, cut into 1-inch cubes
  • 1/2 cup shredded Cheddar cheese
  • 1 pinch red pepper flakes, or to taste

Heat a large pot over medium warmth, then melt butter within it. Introduce the onion into the pot; cook until it becomes tender and slightly pale, approximately 5 minutes. Add potatoes and garlic to the pot; cook until the potatoes begin to soften slightly, roughly 10 minutes.

Add chicken stock, tomatoes, and carrots into the pot; bring to a rolling boil, then lower the heat to medium-low, cover it with a lid, and let it simmer for 10 minutes. Stir in milk and cream; season with salt and black pepper, then introduce the halibut into the pot. Continue to simmer uncovered until the halibut is flaky and no longer translucent in its center, around 10 minutes.

Gently stir in Cheddar cheese and pepper flakes until the cheese is fully melted. Present the dish immediately.
