SERVINGS

Ingredients
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 5 large tomatoes, chopped
- 1 teaspoon dried oregano
- 1 pound Alaskan cod
- 1/2 pound large shrimp, peeled and deveined
- salt to taste
- 1 tablespoon dried oregano, or to taste
Instructions
1
Preheat a skillet over medium-high heat, allowing the olive oil to warm up. Introduce minced garlic into the skillet and cook, stirring constantly, until it reaches a golden brown hue, taking great care to avoid scorching the garlic. Next, add sliced tomatoes to the skillet and cook, stirring frequently, until they start to release their juices. Add a pinch of dried oregano, specifically 1 teaspoon, to the mixture.
2
Now, place the cod and shrimp on top of the tomato mixture. Sprinkle a pinch of salt over them to enhance flavor. Cover the skillet and let it simmer for 3 minutes, allowing the ingredients to meld together.
3
Following this initial cooking time, carefully flip the cod over and sprinkle a pinch of salt and 1 tablespoon of dried oregano over it. Cover the skillet once more and cook for an additional 3 minutes.
4
Finally, remove the cover from the skillet and continue cooking until the juices have evaporated slightly, taking between 2 to 3 minutes.
