  • 1/4 teaspoon ground black pepper
  • 32 (6 inch) corn tortillas
  • 4 medium roma (plum) tomatoes, diced
  • 1 (8 ounce) package shredded Monterey Jack cheese

Begin by cooking the bacon in a substantial, deep frying pan over an elevated heat level, flipping it periodically, until uniformly browned, approximately 10 minutes. Transfer the bacon to a paper towel-lined plate for draining, retaining the grease in the pan. Allow the bacon to cool before crumbling it.

During this time, warm 1 tablespoon of oil in a separate large frying pan over an average heat level. Introduce the onion, jalapeƱos, and garlic into the pan; cook and stir until the onion becomes soft and translucent, roughly 5 minutes. Increase the heat to an elevated level and combine ground beef, salt, and pepper into the pan; cook and stir until the beef is browned and crumbly, taking around 10 to 12 minutes. Discard any excess liquid that accumulates.

Transfer the beef mixture to the pan with bacon grease, stirring in crumbled bacon until it's fully incorporated; maintain it warm over a low heat level.

Warm the remaining 1 tablespoon of oil in a clean frying pan over an elevated heat level. Place one tortilla into the hot pan; place a generous amount of beef mixture onto the lower half of the tortilla. Cook until bubbles begin to form in the tortilla, then fold it over the beef. Continue cooking until the taco is crisp and lightly browned on each side, approximately 1 to 2 minutes total. Repeat the process to fill and cook the remaining tacos, adding more oil as necessary.
