Air Fryer Vegetable Pakoras
Ingredients
  • 2 cups chopped cauliflower
  • 1 1/4 cups chickpea flour (besan)
  • 1 cup diced yellow potatoes
  • 3/4 cup water
  • 1/2 red onion, chopped
  • 1 tablespoon salt
  • 1 clove garlic, minced
  • 1 teaspoon curry powder
  • 1 teaspoon coriander
  • 1/2 teaspoon ground cayenne pepper, or more to taste
  • 1/2 teaspoon cumin

Combine cauliflower, chickpea flour, potatoes, water, red onion, salt, garlic, curry powder, coriander, cayenne pepper, and cumin in a large bowl until everything is well incorporated. Allow the mixture to sit for 10 minutes, allowing its components to meld together.

Next, preheat your air fryer to a high temperature of 350 degrees F (175 degrees C). Lightly coat the air fryer basket with a non-stick cooking spray to prevent sticking.

Spoon 2 tablespoons of the batter mixture into the air fryer basket and spread it out evenly. Continue adding spoonfuls of the batter to the basket, spacing them out until they're not touching one another. Finally, give each pakora a light misting of cooking spray to help them crisp up.

Place the pakoras in the preheated air fryer and cook for 8 minutes. Flip them over and continue cooking for an additional 8 minutes. Remove the pakoras from the air fryer and transfer them to a plate lined with paper towels. Repeat the process of adding batter, coating the basket, and cooking the pakoras until all the batter is used up.
