  • 2 cups water
  • 1/3 cup kosher salt
  • 1/3 cup brown sugar
  • ground black pepper to taste
  • 2 tablespoons butter, or as needed
  • 1 pinch seasoned salt, or to taste (such as Texas Roadhouse®)

Begin by allowing the frozen turkey breast to thaw in the refrigerator for approximately 24 hours.

Next, prepare a brine solution by bringing water to a rolling boil and then stirring in kosher salt, brown sugar, and pepper until dissolved. Remove the brine from heat and let it cool to room temperature, a process that should take around 30 minutes. Once cooled, carefully remove the turkey breast from its packaging and leave any attached netting intact if possible. Place the turkey into a container, cover it with the cooled brine, and add more water if necessary to ensure the turkey is completely submerged. Make sure the brine is well mixed with the water by stirring it in thoroughly. Allow the turkey to marinate in the brine for 8 hours, or overnight, within the refrigerator.

Before cooking, preheat an air fryer to 390 degrees F (200 degrees C), following the manufacturer's specific instructions for temperature and time settings.

Remove the turkey from its container and discard the brine. Pat the turkey dry with paper towels to remove excess moisture.

Cook the turkey in the preheated air fryer for 15 minutes, flipping it halfway through. Remove any attached netting and season the turkey once more.

Reduce the air fryer temperature to 360 degrees F (182 degrees C) and continue cooking for an additional 20 minutes, flipping the turkey halfway through. Increase the temperature to 390 degrees F (200 degrees C), flip the turkey, and cook until it reaches a safe internal temperature of no longer pink in the center, approximately 15 minutes more. Remove the turkey from the air fryer and let it rest for about 5 minutes before cutting and serving.
