- 1 tablespoon olive oil
- 1 red bell pepper, seeded and cut into 1-inch pieces
- 1 small onion, cut into 1-inch pieces
- 1 jalapeno, seeded and cut into 1-inch rings
- 1/2 teaspoon olive oil
- 1/2 teaspoon taco seasoning mix
- 1/2 teaspoon ground cumin
- 1 pinch salt and ground black pepper to taste

Immerse potatoes in a container of chilled water for 20 minutes to remove excess starch.

Preheat the air fryer to a high temperature of 320 degrees F (160 degrees C). Remove the potatoes from the water, pat them dry with a clean cloth, and place them in a spacious container. Drizzle 1 tablespoon of olive oil over the potatoes and mix well to coat them evenly.

Transfer the potatoes to the preheated air fryer basket and set a timer for 18 minutes.

Place bell pepper, onion, and jalapeno in the same container used for the potatoes. Add 1/2 teaspoon of olive oil, taco seasoning, ground cumin, salt, and pepper to the container. Mix everything together until they are well-coated.

Combine the potatoes from the air fryer with the vegetable mixture in the same container. Return the empty air fryer basket to the air fryer and increase the temperature to 356 degrees F (180 degrees C).

Mix everything together quickly in the container, ensuring the potatoes are evenly distributed with the vegetables and seasoning. Transfer the mixture into the air fryer basket and cook for 6 minutes, shaking the basket halfway through to achieve even cooking. Continue cooking until the potatoes are browned and crispy, approximately 5 minutes more. Serve immediately.
