Ingredients
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt, divided, or more to taste
- 1/2 teaspoon ground black pepper
- 2 eggs
- 2 tablespoons water
- 1 cup panko bread crumbs
- 2 teaspoons vegetable oil
- 1/2 cup whole green beans
- 1/2 cup whole asparagus spears
- 1/2 cup red onion rings
- 1/2 cup sweet pepper rings
- 1/2 cup avocado wedges
- 1/2 cup zucchini slices

Preheat your air fryer to 400 degrees Fahrenheit and your oven to 200 degrees Celsius.

In a small bowl, mix together 1/4 teaspoon of salt and some pepper. In another bowl, whisk eggs with water until well combined.

In a third bowl, combine panko breadcrumbs and oil to create a coating mixture. You will need this mixture later.

Add the green beans, asparagus, red onion, sweet pepper, avocado, and zucchini to a bowl. Sprinkle them with some salt and toss to coat.

Dip each vegetable into the flour mixture, then the egg mixture, and finally the panko mixture to coat them evenly.

Place half of the coated vegetables in a single layer in the air fryer basket. Cook until they are golden brown, approximately 8 to 10 minutes.

If desired, add some extra salt on top of the cooked vegetables. Transfer them to the oven to keep warm.

Repeat the process with the remaining vegetables and transfer them to the air fryer basket.
