Ingredients
- 2 sweet potatoes, peeled
- 1/2 teaspoon Cajun seasoning
- olive oil cooking spray
- sea salt to taste

Begin by placing a large pot of water on the stovetop and bringing it to a rolling boil. Next, gently submerge sweet potatoes into the boiling water and continue cooking until they can be easily pierced with a fork but still retain some firmness, approximately 15 minutes. Be cautious not to overcook the potatoes as this can result in them becoming mushy and difficult to grate. Remove the sweet potatoes from the water with a slotted spoon and allow them to cool down.

Proceed by taking the cooled sweet potatoes and using a box grater to shred them into a bowl. From there, carefully incorporate Cajun seasoning into the grated sweet potatoes, taking care not to overdo it. Using your hands or a spoon, shape the mixture into tot-shaped cylinders.

Next, take the air fryer basket and give it a light coating of olive oil spray to prevent sticking. Arrange the tot-shaped cylinders in the basket in a single, non-overlapping row, leaving space between each tot to allow for even cooking. Give the tots a light spray of olive oil spray and sprinkle with sea salt, taking care not to overdo it.

Preheat the air fryer to 400 degrees F (200 degrees C). Place the tots in the basket and cook for 8 minutes. After 8 minutes, carefully turn the tots over and give them a light spray of olive oil spray. Sprinkle with additional sea salt, if desired. Continue cooking for an additional 8 minutes to achieve the perfect crispy exterior and fluffy interior.
