Ingredients
- 2 tablespoons soy sauce
- 2 tablespoons sherry
- 2 tablespoons rice wine vinegar
- 1 tablespoon oyster sauce
- 1 tablespoon chopped scallions
- 1 teaspoon white sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon ginger stir-in paste
- 1/2 cup cornstarch
- 1/2 cup all-purpose flour
- 1/2 cup club soda
- 1 egg, beaten
- 1 pound large shrimp - peeled, deveined, and tails left on

Combine the ingredients of the sauce by mixing them together in a small bowl until they are thoroughly blended. Set the mixture aside for later use.

Prepare the shrimp by combining cornstarch, flour, club soda, and beaten egg in a large bowl until everything is well incorporated. Add the shrimp to the mixture and gently stir until they are evenly coated with the batter.

Heat an air fryer according to its manufacturer's guidelines to 400 degrees F (200 degrees C). Cut a piece of parchment paper to fit the air fryer's basket and set it aside for use later.

Use tongs to grasp the shrimp by their tails, then dip them into the batter, allowing any excess batter to fall off. Place the shrimp on the prepared parchment paper without overcrowding it, and then carefully place them into the air fryer basket. Due to space constraints, cook the shrimp in batches.

Cook the shrimp in the preheated air fryer for 8 minutes, or until they reach your desired level of crispiness. Repeat the cooking process with the remaining shrimp and serve them hot alongside the prepared sauce.
