Air Fryer Shrimp Boil with Corn and Potatoes
Ingredients
  • 1 pound baby red potatoes
  • 1/4 cup water
  • 8 ounces Cajun-style andouille sausage, sliced
  • 1 ear corn, sliced in half lengthwise and cut into 2-inch pieces
  • 1 medium onion, sliced into petals
  • 4 tablespoons olive oil, divided
  • 3 teaspoons seafood seasoning (such as Old Bay®), divided
  • 1 pound raw large shrimp, peeled and deveined
  • 1 lemon, cut into wedges

First, preheat your air fryer to 400 degrees Fahrenheit (200 degrees Celsius).

Meanwhile, place the potatoes in a microwave-safe container and add water. Then, cook them on high for 5 minutes using your microwave oven.

After that, rinse the potatoes under cold running water until they have cooled down enough to handle safely.

Then, cut the potatoes in half lengthwise and transfer them to a large bowl. Add sliced sausage, corn kernels, and chopped onion to the bowl.

Mix in 3 tablespoons of olive oil and 2 teaspoons of seafood seasoning, stirring until the potatoes are evenly coated.

Separately, place the shrimp in another bowl and add the remaining 1 tablespoon of olive oil and 1 teaspoon of seafood seasoning.

Mix the ingredients well to coat the shrimp evenly.

Next, place half of the potato mixture into the air fryer basket and cook for 10 minutes.

After that, stir the potato mixture and continue cooking for an additional 5 minutes.

Then, add half of the shrimp to the air fryer basket and cook until the potatoes are tender, sausage is cooked through, and shrimp are bright pink on the outside and opaque on the inside.

Continue cooking for a further 5 minutes, then transfer the dish to a serving plate.

Repeat the process with the remaining potato mixture and shrimp, then serve the dish hot, accompanied by lemon wedges.
