- 1 pound tomatillos
- 1 serrano pepper, halved and seeded
- 1 jalapeno pepper, halved and seeded
- 1/2 large white onion, cut into 2 wedges
- 1 serving cooking spray
- 4 cloves garlic, peeled
- 1/2 cup chopped cilantro
- 1/2 lime, juiced, or more to taste
- 1 pinch salt to taste

Preheat the air fryer to a high temperature, equivalent to 390 degrees F (200 degrees C).

Next, carefully remove the outer coverings from the tomatillos and rinse them under cold water; then cut them in half lengthwise. Place the halved tomatillos and peppers, skin side facing downwards, into the air fryer basket. Add a sliced onion to the mixture.

Lightly mist the vegetables with cooking spray in order to facilitate the roasting process.

Air fry the vegetables for 5 minutes, or until they reach your desired level of doneness. Remove the basket from the air fryer and add minced garlic cloves to the vegetables.

Lightly spray the garlic with cooking spray, allowing it to roast alongside the other ingredients. Air fry for an additional 5 minutes.

Once the vegetables have finished cooking, allow them to cool down completely for a period of 10 minutes.

Transfer the cooled vegetables to the bowl of a food processor and add chopped cilantro, freshly squeezed lime juice, and salt. Pulse the mixture several times until it reaches your desired consistency.

Serve the vegetables at room temperature, or refrigerate them to allow the flavors to meld together over time.
