Preheat the air fryer oven to 375 degrees Fahrenheit (190 degrees Celsius).

Fill a large saucepan with water and put it on the stovetop to reach a rolling boil; then turn off the heat.

Clean and dry the chestnuts. Position them flat-side down on a cutting board. Using a small, pointed knife, carve a deep "X" shape across the rounded side of each chestnut, covering at least half of its surface. Be sure to cut all the way through the outer skin and brown layer beneath, as this will facilitate easy peeling after roasting.

Immerse the chestnuts in boiling water for 1 to 5 minutes, depending on their size. Use a slotted spoon to carefully remove the chestnuts and immediately transfer them to the air fryer basket. Place 1 cup of boiling water in the basket.

Cook the chestnuts in the preheated air fryer oven for 10 minutes. Shake the basket well to ensure even cooking. Check periodically to see if there is still water remaining in the basket; if not, add another 1/2 cup. Continue cooking until the shells have completely peeled away and the exposed flesh has turned a nice brown color, 5 to 10 minutes. Allow the chestnuts to cool until they are easy to peel completely.
