  • 1 tablespoon bacon grease
  • 1/2 cup diced potatoes
  • 2 tablespoons chopped onion
  • 1 serrano pepper, chopped
  • 2 large eggs
  • salt and ground black pepper to taste
  • 4 (8 inch) flour tortillas
  • avocado oil cooking spray

Cook chorizo in a large skillet over high heat, constantly stirring and monitoring its transformation into a deep crimson hue, approximately 30 minutes to 45 minutes.

Remove the chorizo from the skillet and set it aside for later use.

Next, melt the rendered bacon fat in the same skillet over high heat. Add diced potatoes and cook, stirring occasionally, until they reach a tender state that can be pierced with a fork, the onion becomes translucent, and the serrano pepper softens, taking anywhere from 10 to 20 minutes.

Add diced onion and serrano pepper to the skillet, stirring constantly until they reach a state of complete softness. Then, introduce eggs into the mixture and stir until they are fully incorporated and cooked through, taking about 10 minutes.
