  • 4 teaspoons chili powder, divided
  • 4 teaspoons ground cumin, divided
  • 1 skinless, boneless chicken breast
  • 2 teaspoons chipotle flakes
  • 2 teaspoons Mexican oregano
  • salt and ground black pepper to taste
  • 1/2 red bell pepper, sliced into thin strips
  • 1/2 onion, sliced into thin strips
  • 1 fresh jalapeno pepper, sliced into thin strips
  • 2 teaspoons corn oil
  • 1/2 lime, juiced

Soak toothpicks in a small bowl of water to prevent them from catching fire during the cooking process.

Combine 2 teaspoons of chili powder and 2 teaspoons of cumin in a shallow dish to create a spice blend.

Lay a chicken breast flat on a work surface and slice it horizontally through the middle. Use a kitchen mallet or rolling pin to pound each half until it reaches an even thickness of about 1/4-inch.
