  • 1/2 cup white sugar
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 1 large egg, at room temperature
  • 1 medium lemon, zested and juiced, divided
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups powdered sugar
  • 1 medium lemon, juiced

Combine creamed butter, sugar, and pudding powder in a bowl. Whisk in egg, lemon juice, and half of the remaining lemon peel to create a preliminary mixture. Set aside the remaining lemon peel for later use in an icing.

Mix sifted flour, baking powder, and salt together in another container. Gradually incorporate the dry ingredients into the butter-sugar mixture until well blended.

Form the dough into 2 logs, cover with plastic wrap, and refrigerate until solidified, approximately 4 hours.

Preheat the air fryer to 325 degrees Fahrenheit (165 degrees Celsius). Line the air fryer basket with parchment paper for easy cleanup.
