Ingredients
- 1 tablespoon finely chopped fresh rosemary
- 1 teaspoon finely chopped fresh chives
- 1 teaspoon finely minced fresh garlic
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon ground black pepper, or to taste
- 2 tablespoons cold unsalted butter
- 2 3/4 pounds skin-on, bone-in split turkey breast

Preheat the air fryer to its highest temperature setting, which is 350 degrees F (175 degrees C).

Prepare the herb mixture by placing rosemary, chives, garlic, salt, and pepper on a flat surface. Use a knife to finely chop the herbs and mix with butter until it forms a smooth paste.

Pat the turkey breast dry with paper towels to remove excess moisture. Then, spread a generous amount of the herb butter evenly onto both sides of the turkey breast, making sure to also rub some under the skin.

Carefully place the turkey breast into the air fryer basket, with its skin side facing downwards. Cook for 20 minutes at this temperature.

Turn the turkey over so that its skin side is now facing upwards. Continue cooking until an instant-read thermometer inserted into the thickest part of the breast, near the bone, reads 165 degrees F (74 degrees C). This should take approximately 18 minutes more.

Transfer the cooked turkey to a serving platter and cover it with aluminum foil. Allow it to rest for 10 minutes, during which time the juices will redistribute and make the turkey even more tender.

Slice the rested turkey breast into thin pieces and serve it warm, garnished with any additional herbs or sides of your choice.
