- 1 medium zucchini, thinly sliced
- 1 large egg, beaten

Preheat an air fryer oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Mix together panko breadcrumbs and grated Parmesan cheese on a flat surface. Dip one slice of zucchini into the beaten egg, followed by a coating in the panko mixture, pressing it firmly to adhere. Place the coated zucchini slice on a wire tray and repeat this process with the remaining slices. Lightly mist the zucchini slices with cooking spray.

Arrange the zucchini slices in a single layer on the air fryer basket, working in batches if necessary.
