  • 3 cups apple cider vinegar
  • 1 pound red potatoes, thinly sliced on a mandoline
  • sea salt to taste

Begin by placing vinegar in a large, deep cooking vessel and bring it to a rolling boil. Next, add diced potatoes to the pot and allow them to cook for 5 minutes. Remove the cooking vessel from the heat source, cover it with a lid, and let the potatoes sit for 30 minutes.

Prepare a baking sheet by lining it with paper towels. Drain the cooked potatoes, but do not wash them under running water. Arrange the potato slices on the baking sheet in a single layer, making sure none of them overlap each other. Cover the top layer of potatoes with additional paper towels to prevent moisture from escaping. Continue this process until all the potatoes have been layered on the baking sheet.

Follow the manufacturer's guidelines to preheat an air fryer oven to 400 degrees F (200 degrees C). Place the basket rack in the topmost position of the oven, as this will serve as a barrier to prevent the chips from moving around once they start cooking. Arrange the remaining potato slices on three of the oven racks and sprinkle them lightly with salt. Place these racks in the air fryer oven and cook for 10 minutes. Remove the top rack of chips and transfer them to a serving plate. Set the timer for an additional 2 minutes, then remove the next highest rack of chips and set the timer for 1 minute. Finally, remove the final rack of chips and serve them immediately.
