Ingredients
- 1 pound red potatoes, cubed
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped onion
- 2 teaspoons vegetable oil
- 1/2 teaspoon paprika
- salt and ground black pepper to taste
- 1 cup cubed leftover corned beef
- 2 eggs

Heat the air fryer to a high temperature of four hundred degrees Fahrenheit or two hundred degrees Celsius.

Take the potatoes, bell pepper, and onion and place them in a large container. Add some vegetable oil, paprika, salt, and pepper, and mix everything together until the potatoes are well-coated.

Put the potato mixture into the air fryer basket. Then, cook it in the preheated air fryer for ten minutes.

After ten minutes, take the basket out and shake it gently. Continue cooking in the air fryer for another five minutes.

Now, add the corned beef to the mixture and cook it in the air fryer for an additional five minutes.

Make two small indentations in the potato mixture. Crack one egg into each indentation and cook until the eggs are fully set and cooked to your liking, approximately three minutes.
