Ingredients
- 3/4 cup sweet manioc starch (polvilho doce) (such as Yoki®)
- 3/4 cup sour manioc starch (polvilho azedo) (such as Yoki®)
- 1/4 cup whole milk
- 1/4 cup water
- 1/4 cup olive oil
- 1 teaspoon salt
- 2 eggs, lightly beaten
- 3/4 cup shredded Cheddar cheese
- 1/2 cup finely grated Parmigiano-Reggiano cheese

Preheat the air fryer oven to 325 degrees Fahrenheit (165 degrees Celsius).

Combine the cassava root powder and tapioca starch in a bowl until they are perfectly blended.

In a saucepan, combine milk, water, olive oil, and salt. Heat the mixture over high heat until it reaches a boil. Gradually add the starch mixture and stir constantly until all the liquid has been absorbed, resulting in a very dry dough. Remove from heat and let it cool just enough to handle safely.

Add eggs to the starch mixture in the saucepan. Mix until a smooth dough forms and pulls away from the sides of the pan. Add Cheddar cheese and Parmigiano Reggiano cheese; mix until well combined.

Using your hands, shape a golfball-sized piece of dough into a ball and place it on a plate. Repeat with the remaining dough. Cover the air fryer basket with parchment paper to prevent sticking.

Place the balls of dough into the air fryer basket in batches, leaving about 1 inch of space between each one.
