- olive oil, as needed
- 1 cup cooked brown rice
- 1/3 cup freshly grated Parmesan cheese
- 1/4 cup crumbled goat cheese
- 1/4 cup chopped toasted walnuts
- 2 tablespoons chopped fresh basil, divided, or more to taste
- 2 cloves garlic, minced
- 1/4 cup Italian-seasoned bread crumbs, divided
- 1 tablespoon olive oil

Remove the tops of the tomatoes and use a melon baller to carefully scoop out the flesh, leaving about 1/4- to 1/2-inch of thick sides and bottoms intact. Discard the removed tops and flesh.

Next, lightly coat the bottom of an air fryer basket with a thin layer of olive oil. Follow the manufacturer's guidelines to preheat the air fryer to 370 degrees F (188 degrees C).

In a separate bowl, mix together cooked rice, Parmesan cheese, goat cheese, chopped walnuts, 1 tablespoon of fresh basil leaves, and minced garlic. In another bowl, combine bread crumbs with 1 tablespoon of olive oil.

Now, fill the hollowed-out tomatoes with the rice mixture, followed by a sprinkle of bread crumb mixture on top. Arrange the stuffed tomatoes in the prepared air fryer basket.

Finally, cook the stuffed tomatoes in the preheated air fryer for about 15 minutes, or until they are tender and the filling is heated through. The topping should be golden brown by then.
