African Yam and Peanut Stew

  • 2 cups yellow split peas
  • 5 yams, peeled and diced
  • 3 sweet onion (such as Vidalia®), chopped
  • 1 cup red lentils
  • water to cover
  • 3 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 1/2 cup peanut butter
  • 1/2 cup lemon juice
  • 2 tablespoons soy sauce
  • 1 (19 ounce) can chickpeas, drained
  • 2 cups frozen spinach
  • salt to taste

Place the split peas in a large vessel and submerge them under several inches of cool water, allowing for an hour-long soaking period.

Combine the drained split peas with yams, onions, and red lentils in a large cooking vessel. Add enough water to cover the ingredients by approximately 1 inch, then stir in minced garlic and grated ginger. Bring the mixture to a rolling boil, carefully removing any foam that rises to the surface with a slotted spoon. Continue cooking until the yams are extremely tender, taking around 1 hour and 30 minutes.

Mash the split peas, yams, and lentils together using a potato masher. Introduce peanut butter, lemon juice, and soy sauce into the soup, stirring until well combined. Add chickpeas and frozen spinach to the mixture, cooking until warmed through, typically within 8-10 minutes. Season with salt to taste
